Sedap Mango Curry Chicken

Mangoes are in season recently & I bought 3 gigantic ones from Cold Storage. After we devoured 2 of them, I had a craving for curry chicken. However, inspiration struck me to add mango which will add an extra sweetness to it. Thus, I tweaked my initial recipe & voila, Mango Curry Chicken is born!

Ingredients (serves 1 toddler + 1 adult):

1 big ripe mango, cubed
1 can of light coconut milk
1 can of water
3 Sakura chicken drums
8 organic French beans, diced
1 clove of garlic, minced
1/2 tbsp of organic VCO
1/8 tsp of curry power
150g of Alce Nero organic spaghetti

Directions:

1. Heat up VCO then lightly fry garlic.

2. Add mango chunks & curry powder to stir fry till fragrant.

3. Pour in coconut milk & water & when it starts to boil, add chicken & simmer for 20mins till chicken is cooked.

4. Remove chicken then add in beans followed by pasta. Cook till pasta is al dente as per packing instruction then serve warm.

Another successful cooking experiment ;) The aroma of the mango has been infused into the curry gravy so it's naturally sweetened plus the mild spiciness & fragrance from the spices in the curry powder made it really SEDAP!!!

Splashing Good Time @ Safra Yishun

It's been awhile since we brought BB to the pool & we were honoured to be extended a media invite to SAFRA Yishun's Aloha Pool Party to celebrate the reopening of the swimming pool & its brand new Pirate Adventure Wet Play Pool <3

From the moment we entered, BB cldn't wait to 'dive' right in..lolz! This was actually our first time to this pool so I can't give a before & after comparison. However, what greeted us right at the entrance was the Pirate Adventure Wet Play Pool. To be honest, it's not a v big area but it was absolutely enough to keep my almost 4yo toddler occupied for hours ~.<

    My lil' pirate <3

There are 3 small slides which aren't very high & thus were more inviting for BB as compared to the ones at Sengkang Swimming Complex which we had been to.

The lil' boy oso spent quite a fair deal of time shooting the water guns with other kiddos. Well, guns are always part & parcel of boys' childhoods, aren't they?

Other than the play pool, there's also another pool with the re-conditioned waterfall 2 longer rainbow slides suitable for older kiddos or brave LOs can give it a go too!

In between the two above-mentioned pools is the Training Pool where the Fin Swim School conducts swimming classes. At the rightmost corner lies the Lap Pool where adults can do their swim laps leisurely.

After the upgrading works, there is an expanded sheltered area with tables & chairs to the left of the entrance. The brand new family friendly toilets are of SAFRA's standards too! Clean, spacious & most importantly, fully equipped with boys' urinals & warm showers which BB prefers to cold ones..hee!

    Safety first ;)

Do you know that SAFRA members & children below 5 years old actually enjoy FREE entry into the pool daily? Other terms & conditions are as follows:
